 How to make Pav Phaji Recipe :




        Ingredients:

  •   3 medium-sized potatoes, boiled and mashed 
  •   1 cup chopped mixed vegetables  (carrots, cauliflower, peas, capsicum)       
  •  1 large onion, finely chopped   
  •  2-3 cloves of garlic, minced     
  • 1 inch ginger, grated       
  •  2-3 medium-sized tomatoes, finely  chopped       
  •   2-3 tablespoons pav bhaji masala             
  •   1 teaspoon cumin seeds     
  •  Salt to taste
  • 2-3 tablespoons oil
  • 1 tablespoon butter
  • 8-10 pav buns
  • Chopped coriander leaves for garnish
  • Lemon wedges for serving

       Intructins: 

1. Heat oil in a large pan or kadhai. Add cumin seeds and let them splutter.
2. Add finely chopped onions and sauté until they turn translucent . Add minced        garlic and grated ginger and sauté for a minute or until the raw smell goes away.   
 3. Add chopped mixed vegetables and salt to taste. Mix well and cook for 5-6 minutes or until the vegetables are almost cooked.                                                         
 4.  Add finely chopped tomatoes and pav bhaji masala. Mix well and cook for 5-6 minutes or until the tomatoes are soft and mushy.                                                       
  5.  Add the mashed potatoes and mix well. Cook for another 5-7 minutes or until the vegetables are completely cooked and the bhaji is thick and creamy.                     
 6.  Add a tablespoon of butter and mix well. Turn off the flame.                                 
 7.  Heat a griddle or tawa. Slit the pav buns horizontally, but not all the way through.                   8.  Spread some butter on the hot griddle and toast the pav buns until they are golden brown and crispy.                                                                                   
  9.  Serve the hot bhaji with the toasted pav buns, a wedge of lemon, and chopped coriander leaves on top
